Baked Caprese Chicken

All you need for this recipe is some boneless chicken breast, a jar of tomato bruschetta topping, and fresh mozzarella



Ingredients


1 lb boneless, skinless chicken breast

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1 tsp Italian Seasoning

Olive oil spray

Bruschetta topping (recipe below) -OR- a 12oz. jar of Trader Joe’s bruschetta topping

4 oz fresh mozzarella, sliced

fresh basil and/or parsley, for garnish

Bruschetta Topping

1-14oz. can diced tomatoes

2 tsp dried herbs - any combination of basil, oregano, or all-purpose Italian seasoning

1 clove garlic, minced

1 Tbsp extra virgin olive oil

1/2 Tbsp balsamic vinegar

Salt and pepper, to taste


Directions


Preheat the oven to 375°F. Season both sides of the chicken with the salt, pepper, garlic powder, and Italian seasoning. Spray a small glass baking dish with oil (dish should be large enough to fit the chicken side by side in a single layer). Spread the bruschetta topping over the chicken. Bake until internal temperature of chicken reaches 165°F, about 35-40 minutes. 20 minutes into the bake time, add the sliced mozzarella on top and return to the oven to finish cooking. Switch your oven to “broil” during the last 5-10 minutes to brown the melted cheese.


When the chicken is done, remove it from the oven and allow it to rest for 5 minutes. Carefully transfer the chicken onto a cutting board and cut it into 1/2” thick slices. Then, return the slices to the baking dish, nestling them into the bruschetta sauce. Sprinkle fresh herbs on top, and serve with your choice of sides.

One chicken breast is more than one serving per person. Slicing it when it has finished cooking allows for better portion control. It also soaks up the juices from the bruschetta topping, which means more flavor per bite!
