Instant Pot Carnitas

I love using my Instant Pot to cook pork butt for a variety of recipes. It’s so easy, and the meat comes out so tender. When I make carnitas or Kalua pork, I always finish the meat in under the broiler to crisp it up a bit and render any fat that’s on the meat (even more flavor!) Perfect for your next taco or burrito bar alongside toppings and sides of your choice!



Ingredients


Seasoning mix:

1 Tbsp garlic powder

1 Tbsp cumin

2 tsp salt

1 tsp pepper

2 tsp dried oregano

2 tsp brown sugar

1 tsp ground coriander

1 tsp chili powder

1 tsp smoked paprika


3 lbs pork butt or shoulder, cut into 2” cubes

1 cup beer

1/2 cup orange juice

1/4 cup lime juice


Directions


In a small bowl, mix together all of the seasoning ingredients. Rub the seasoning all over the pork, coating the pieces well. Pour the beer, orange juice, and lime juice into the insert of the Instant Pot. Add the meat, and if you’ve used fresh oranges and limes, add them on top if you like.


Cook on high pressure for 35 minutes. Allow the pressure to release naturally for 15 minutes. While the pressure is releasing, preheat your broiler with the oven rack in the top position.


Discard the orange and lime pieces, if you’ve used them. Transfer the pork to a rimmed baking sheet, and shred with two forks. Taste, and season with more salt, if necessary. Spread the meat out in an even layer and broil for 5 minutes to crisp it up. Remove from the oven, ladle some of the cooking juices onto the meat, and gently toss with a spatula. Return to the broiler for another 5 minutes. Ladle more cooking juices on top and serve with your choice of tortillas and toppings.
